Sunday Supper: Slow Roasted Carnitas Tacos with Fresh Salsa and Avocado

There is nothing like a little pork to get your day off to a great start! Head to your favorite butcher and ask for some pork butt to slow roast carnitas and you won't be disappointed. This might be the simplest Sunday Supper yet. And yes, there is a bite out of my taco. I couldn't wait.

What You Need
Ripe juicy tomatoes
fresh cilantro
red onion
jalapeno
avocado
corn tortillas
pork butt
Salt& Pepper

What to do:
Preheat oven to 250 degrees. Season the pork but to taste with salt & Pepper on all sides. Wrap in tinfoil and place on a baking sheet. Slow roast in the oven for about 4 hours. Prepare the salsa in advance for best flavor. Dice up the tomatoes, red onion, cilantro and some jalapeno to taste. Stir in a bowl and sprinkle with salt. Refrigerate until time to serve.  Remove the pork from the oven and allow to rest for 10 minutes.  Meanwhile, heat the tortillas in the oven for about 2 minutes. Plate and serve. Enjoy!
